Piña Colada Ice Pops

My favorite drink during the summer months is a frozen piña colada! Since I’m pregnant and not able to enjoy the alcohol version I have been drinking virgin piña coladas like they are going out of style. I bought a bottled mix at the store and have been making my own here at home by the blender full! A few nights ago I had quite a bit leftover in the blender and didn’t want it to go to waste so I decided with a few changes they would make the perfect ice pops that even my kids would enjoy!

Piña Colada Ice Pop Ingredients:
 
**I used the Master of Mixes Piña Colada mix for this recipe which you can find in most beer/wine isles at the grocery store. You could probably use any mix and just tweak it as needed.
  • 16 ounces of Piña Colada Mix
  • 5 cups of ice
  • 1/2 cup of water
  • Marciano cherries – no stems
  • Popsicle mold

Directions:

  • In a blender combine piña colada mix, ice and water – blend until smooth.
  • Push a cherry into the bottom of each popsicle mold and pour piña colada mixture to fill the mold. Stick a popsicle stick or paper straw into each one and freeze for 4-6 hours or overnight.

**For some of the popsicles I added a few fresh strawberries into the blender along with the piña colada mixture and used it to top of the molds.

I have to say they turned out really yummy – all three of my kids and I have been enjoying them the past few SUPER HOT 90 degree days! I personally still have a thing for cherries in my drinks (I never grew out of it since sipping Shirley Temples as a girl) so that is my favorite part! Another fun part about these ice pops are the straw sticks – they add color and fun to each bite!
