It was December of 2008 and only a few weeks before Christmas when my husband lost his job and we did a little role reversal. I was currently pregnant with our second baby and only working part-time but I was lucky enough to be able to pick up full time hours right away. That meant Mike spent (unfortunately) a few months at home playing Mr. Dad. Mike and Wyatt had a routine of watching Mickey Mouse Clubhouse every morning and I made a habit of writing down directions to make or start dinner before I left each morning. Dinners had to be EASY – nothing fancy or complicated. A co-worker gave me this recipe after I told her how I needed easy dinner recipes even my husband with no cooking knowledge beyond ramen noodles could make. This BBQ chicken was a hit and has stayed in our meal rotation ever since!
- 5-6 chicken breasts
- 16 ounce bottle of BBQ sauce
- 1/2 cup of Italian dressing
- 1/4 cup of brown sugar
Directions:
- Place chicken breasts in a crock pot.
- In a medium bowl mix together the Italian dressing, BBQ sauce and brown sugar. Then pour over the top of the chicken breasts.
- Cook on high for 4-5 hours or low for 6-8 hours.
Another great thing about this chicken is that it is so versatile! You can eat it alone, put it on Texas toast or a hoagie roll or even stuff it into a baked potato to make a filling main dish!
