Coconut Lemon Cookies–Cake Mix Cookies

Cookies are good year round, but in the summer I try to spend a lot less time in the kitchen. We are always out trying to soak up as much sun as possible. These cookies are so quick to whip up and yummy too! I recently saw a recipe for lemon cookies made from a lemon cake mix and I thought I had the lemon extract that it called for but when I looked through my cupboard only to find that I was out I tried coconut extract instead.     I love using that recipe you are talking about…love how you put the twist of coconut extract in the batter instead! They turned out super pretty! And I can just imagine the taste. I'm doing using your recipe next time! Commence drooling!
