Need a quick and easy dinner idea? One you can get on the table in 30 minutes? I have you covered! With three kids ages five and under my grocery trips are not always that fun (okay they are almost NEVER fun). The other day I had the chance to shop with just the baby and things went so smooth! You can see pictures from our trip HERE. I was able to take my time, price match and use coupons during my trip to Walmart. Since Walmart is about 15-20 minutes from our house I try to stock up and go once a week. I make a list of dinners for the week and all of the ingredients we need. This week was pretty hectic so I needed a few quick and easy dinners. With two growing boys and a husband with an appetite I can’t just whip up a box of macaroni and cheese. Our goal has been to try new things and keep dinners healthy since my husband has been diagnosed with diverticulitis. For one of our dinners I whipped up fish sandwiches with a homemade remoulade sauce. I was able to create a healthy dinner and get it on the table in 30 minutes thanks to Mrs. Paul’s fish tenders and Bird’s Eye vegetables! This was our first time trying the fish tenders, but I think it is safe to say that we have Bird’s Eye streamfresh veggies at least once a week and my favorite is the super sweet corn! (Although my husband can no longer have the corn with his diverticulitis so it looks like I won’t be buying them too often anymore.) For this dinner you will need-
- Mrs. Paul’s Crispy Fish Tenders
- Bird’s Eye vegetables
- Buns
- Sandwich toppings (lettuce, tomatoes and whatever else you like)
- Remoulade sauce (ingredients and directions below)
To keep my meal under thirty minutes I first put the fish tenders in the oven since they took the longest (25 minutes). While the tenders were cooking I whipped up the remoulade sauce for our sandwiches. Remoulade Ingredients:
- 1 cup of Mayonnaise
- 1/4 cup of horseradish mustard (if you can’t find it then use mustard and horseradish separately)
- 1 tablespoon of chopped garlic
- 1 teaspoon of dill pickle juice
- 1 teaspoon of paprika
- 1 teaspoon of creole seasoning
Directions: Just mix all of the ingredients together and let them sit until it is time to serve dinner. If you wanted to make this earlier in the day or in the morning before you go to work you can then let all of the flavors meld together and it tastes even better! A few minutes before the fish tenders were done I started my veggies in the microwave. Once the fish tenders were done I pulled them out of the oven (OMG did they look delicious!!) and then popped the open buns in the broiler to add a little bit of crisp to them. A minute or two is all it takes because you don’t want to burn them! Then everything was done all at the same time and we were ready to eat! So all you need is 30 minutes and you can whip up a delicious dinner for your family! You could even have it ready right as your husband walks in the door and pretend you had been slaving away on this dinner – he would never know! My husband said we need to add this to our dinner rotation because it was something different that really hit the spot. Since I mentioned I like to shop with coupons I couldn’t NOT share these–
