School is back in and for some of you the weather is starting to change into Fall but here in Florida the hot temperatures are only just beginning. It has been in the 90s and I melt every time I walk from the air conditioning to go outside. The hot weather is still perfect for pool days, beach days, weekend barbecues and cold drinks. Even early in the morning as I am loading kids for school and daycare the heat has me working up a sweat.
This past weekend my family and I hung out around the house. We did a big house cleaning, finished the laundry for the week and had friends over for a cookout Saturday night. Overall it was a busy yet relaxing weekend that we all needed. Last week was the first week of school and daycare for our two littlest babes and it was a rough week for everyone. This is the first time any of our children have gone to daycare so it was the first week of daycare for Mike and I too. By Friday night we were exhausted!! I was in bed by 9pm. The babes were so excited to head to daycare with their new book bags and lunch boxes Monday morning but then every day after that was filled with tears as they said they didn’t want to go and it broke my mom heart. On Tuesday I cried the whole way to work after dropping them at daycare wondering if I was making the right decision to return to a job outside the home. Oh the #momlife …

A few times this weekend I felt like I needed a pick-me-up. With the busyness of working all week and then heading straight home afterwards to make dinner, get kids bathed, do homework and put the kids to sleep there was no time for anything else. It left Mike and I feeling completely drained. I had a few chances while the littles were napping to whip myself UP a Vanilla Marshmallow Coffee Milkshake while finishing up ETSY orders and watching The Good Wife. The ‘alone’ time was much needed to say the least not to mention I got tons of work done.
Here is my pro tip – put whip cream into a sandwich size storage bag and cut the corner off. Squeeze it out to create a perfectly topped drink.

Vanilla Marshmallow Coffee Milkshake Recipe
Yield: 2Ingredients
- 1 cup of vanilla ice-cream, more if a thicker shake is desired
- 1 cup of International Delight Vanilla Iced Coffee
- 1/2 cup of marshmallow crème
- 1 cup heavy whipping cream
Instructions
- With a mixer beat heavy whipping cream and marshmallow crème on high until stiff peaks form. Set aside.
- In a blender mix ice-cream and International Delight Vanilla Iced Coffee until blended. Pour into cups. (add more marshmallow crème to the blended mixture if you would like an extra dose of marshmallow like we do)
- Spoon or pipe whip cream on top.

A nice cold refreshing shake that I made in under five minutes did the trick. It kept me powering through my to do list while still getting a few quiet minutes (and sips) to myself.
