Maraschino Cherry Cake Recipe

Valentine’s Day is right around the corner and the way to my heart is a slice of delicious cake or the perfect bakery cupcake. With four kids Valentine’s Day is just like any other day for my husband and I – we grab a kiss from each other during passing and dinner is something normal. There are no candles, no romantic dinners for two and that is fine by us. We make Valentine’s Day fun for the kids with crush floats, heart shaped sandwiches and little treats.
 
As I was day dreaming of something I would love to have on Valentine’s day I kept thinking about a cake with cherries and then this recipe was born. Maraschino cherries are a favorite in our house. The kids, my husband and I can polish off a jar of cherries in one night because they are simply irresistible. We eat them on ice-cream, over a bed of fluffy whipped cream on our cocoa and all by themselves. I thought why not make a cherry cake? This is a semi-homemade recipe with a few steps but in the end you will pay about the same for the entire cake as you might pay for a slice or two at a bakery! (Did I mention this is a bakery-worthy recipe?!) Serve this cherry cake with whipped buttercream frosting to your crush and they will be looking at you with lotsa’ love!

I even added some chocolate covered cherries to the top of the cake which make it look over-the-top delicious.

 Maraschino Cherry Cake Recipe
 
Cake Ingredients-
  • Vanilla Cake Mix
  • 1 cup Maraschino Cherry Juice
  • 1/3 cup chopped Maraschino Cherries
  • 1/2 cup oil
  • 3 eggs

Frosting Ingredients-

  • 8 ounce tub Whipped Topping
  • Buttercream Frosting

Chocolate Covered Cherry Ingredients

  • Maraschino Cherries with stems
  • 1 cup chocolate chips

Cake Directions-

  1. Mix cake mix, cherry juice, cherries, oil and eggs as directed on cake mix box.
  2. Batter will be enough for two round cake pans so you can make a double layer cake. Bake each layer at 350 degrees for 24-26 minutes.
  3. Allow both layers to cool completely.

Frosting Directions-

  1. Use a spatula to fold whipped topping and buttercream frosting together (add red food coloring or a splash of maraschino cherry juice if desired).
  2. When cake layers are cool frost the cake with whipped buttercream.

Chocolate Covered Cherry Directions-

  1. Melt chocolate in a microwave safe bowl. Put chocolate in microwave for thirty second intervals stirring in between until melted and smooth.
  2. Dry cherries with a paper towel and then dip into chocolate. Place on wax paper until chocolate has set. Place chocolate covered cherries on the top of the cake.

**Store cake covered in the refrigerator.

I just can’t decide what my favorite part about this cake is. It has a few steps but it is still really easy to make if you are willing to invest an hour or so into it. The cake batter whips up in minutes and while it was baking I made the frosting and chocolate covered cherries. Once the cake layers were cool I pulled everything together in just a few minutes.
