Today Mariah is sharing some fun and easy Snowball Cookies! Enjoy!
Hi, I’m Mariah from Giggles Galore and I am thrilled to be here with Poofy Cheeks and sharing one of my favorite holiday cookies! One of my favorite things about this time of year is all the memories made baking in the kitchen. I fondly recall standing at the kitchen counter and making dozens of cookies with my mom as a child and now that I have my own kids it’s a tradition we all love. These Snowball Cookies are easy and the kids love helping roll them in the “snow.”
Snowball Cookies
Yields: 3 dozen
1 c. butter or margarine (room temperature)
½ c. powdered sugar
2 tsp. vanilla
2 c. flour
1 c. chopped pecans
1 c. additional powdered sugar for rolling baked cookies in
With an electric mixer, cream butter and sugar; add vanilla and mix well. Add flour and nuts, and mix on low just until the flour is beginning to be incorporated. (DO NOT over-mix. The cookie dough will be crumbly, but over-working the dough will result in tough cookies.) Use your hands to finish gently mixing the dough until it can be shaped into a ball. Chill dough for 3-4 hours. Shape into balls about the size of a walnut. Bake on ungreased cookie sheet at 325 degrees about 20 minutes. Cool slightly, and roll warm cookie balls in powdered sugar.
And the best part is you can package these snowballs up and deliver them to neighbors without them melting…but we can’t guarantee they won’t melt in your mouth!
