Touchdown Bruschetta Dip

Did you watch the Big Game on Sunday? We did with lots of snacks including bruschetta dip! Our plans were to have people over but my husband was back in the hospital this past week so we kept things low key. Of course we still had to whip up some good food before we could gather together on the couch to watch the game, commercials and half time show. (I watched for the commercials and the half time show!) The biggest hit of the night was my Bruschetta Dip – it disappeared by the time the power came back on in the stadium! I must admit I loved the extended snack time half time. The best part about a bruschetta dip is that you can eat it throughout the night without the bread getting soggy like a regular bruschetta AND the longer the flavors meld the better it is!

Easy Touchdown Bruschetta Dip

Ingredients:
  • 1 cup Classico crushed tomatoes
  • 8oz cubed Fresh Mozzarella
  • Loaf of French Bread
  • 2 TBSP chopped Fresh Basil
  • 1 TBSP chopped Garlic
  • 1/4 cup Butter

Easy Touchdown Bruschetta Dip

Directions:

For the bread – cut loaf of french bread into slices. Place butter and chopped garlic in a bowl and microwave for 20 seconds or until butter is melted. Dip the slices into the butter and then place on a cookie sheet (butter side up). Put the bread under the broiler for 5 minutes or until golden brown. Once it is finished cut each slice in half. For the bruschetta dip – In a bowl mix Classico tomato sauce, chopped basil, cubed mozzarella and garlic in a bowl. If you have time give the dip time to sit for the flavors to meld together. This would be a great dip to make the night before!

Easy Touchdown Bruschetta Dip

This was my first attempt at concocting my own bruschetta dip, but next time I make it I won’t change a thing. It was perfect! My husband and his buddies loved it. They all returned for more and one even asked if I had any more when the bowl was empty. In my book that equals success. All of the ingredients were picked up at Walmart and the reason I love the Classico canned tomatoes is because they are 100% all natural, packed fresh and have NO preservatives my friends!

    What a great, easy dish for a party! Bruschetta is always a hit, but what a great idea to make it as a dip. That way the toasts will stay nice and crispy for everyone. 🙂
