The first day that I returned to work after having our first son, my mother-in-law, Carol, spent the day with my husband. He felt nervous to spend such a large amount of time with Wyatt all by himself. While I was at work my mother-in-law ran to the store and made cabbage casserole for dinner.
I won’t lie. When I first saw it, I thought I would never like it and dreaded the fact that I would have to try a bite of this cabbage meal and then pretend to like it. After I took a bite I was pleasantly surprised.
The cabbage casserole was full of flavor and very good! In fact, a week later I made it again. We make this when we want to mix things up – when we are sick of Italian, Mexican, and chicken dishes!
Don’t knock it until you try it! Carol’s Cabbage Casserole is delish!
To make this casserole you will need the following ingredients:
- 1 medium cabbage
- 1 medium onion – diced
- 1.5 pounds of ground beef
- 2 tablespoons Worcestershire sauce
- 1 pinch of salt
- 1 cup of water
- 1 box of Cheese Scalloped Potatoes
Place the ground beef and onion in a skillet and cook until the meat is browned. Then drain.
While the burger is cooking, chop the cabbage and spread it across the bottom of a 9×13 casserole dish.
Once the burger is browned, drain it and then mix in Worcestershire sauce and salt.
Spread the burger over the cabbage.
Layer the uncooked scalloped potatoes.
In a separate bowl, mix the cheese packet from the potatoes with one cup of water. Pour this all over the top of the potatoes.
Then spread the can of diced tomatoes across the top.
Cover with foil and bake at 350 degrees for 45-60 minutes (until cabbage is tender).
