Carol’s Cabbage Casserole

The first day that I returned to work after having our first son my mother-in-law, Carol, spent the day with my husband. He felt nervous to spend such a large amount of time with Wyatt all by himself. While I was at work, my mother-in-law ran to the store and whipped up dinner for us. She had made a cabbage casserole for us. I won’t lie. When I first saw it, I thought I would never like it and dreaded the fact that I would have to try a bite of this cabbage meal and then pretend to like it.After I took the bite, I was pleasantly surprised. The casserole was full of flavor and very good! In fact, a week later I made it again. This isn’t one of those meals you could eat every night, but it is very unique and different. We make this when we want to mix things up – when we are sick of Italian, Mexican, and chicken dishes! Moral of the story – don’t knock it until you try it! Carol’s Cabbage Casserole is delish! To make this casserole you will need:

  • 1 medium cabbage
  • 1 medium onion – diced
  • 1.5 pounds of ground beef
  • 2 tablespoons Worcestershire sauce
  • 1 pinch of salt
  • 1 cup of water
  • 1 box of Cheese Scalloped Potatoes

IMG_8217 IMG_8219 Place the ground beef and onion in a skillet and cook until the meat is browned. Then drain. IMG_8222 While the burger is cooking, chop the cabbage and spread it across the bottom of a 9×13 casserole dish. IMG_8225 Once burger is browned – drain it and then mix in Worcestershire sauce and salt. IMG_8224 Spread the burger over the cabbage. IMG_8226 Layer the uncooked scalloped potatoes. IMG_8227 In a separate bowl, mix the cheese packet from the potatoes with one cup of water. Pour this all over the top of the potatoes. IMG_8228 IMG_8229 Then spread the can of diced tomatoes across the top. IMG_8230 IMG_8232 Cover with foil and bake at 350 degrees for 45-60 minutes (until cabbage is tender).
