Piña Colada Fruit Dip with Silk Almond Coconut Blend

I mentioned the other day that I am trying to eat healthy. My fourth baby, Emmett, was born one month ago and of course I had him right at the beginning of summer when everyone wants to swim and prance around in their bikinis. I won’t be pulling out the bikini this summer folks but I would like to look halfway decent when I squeeze myself into my one piece suit!

Since I am breastfeeding I’m not looking to try some crazy diet or count my calories but from counting calories in the past I know the things that get me into trouble. Culprit number one is sugary drinks (A.K.A. peach tea). Culprit number two is dessert after dinner. Culprit number three is not eating breakfast. I have been making a point to eat breakfast every morning because not only do I need breakfast – Emmett needs me to eat breakfast too! I have made a conscious effort to scale back on the sugary drinks and carry a water bottle around with me at all times. Finally the hardest has been trying to come up with creative ways to replace nightly bowls of ice-cream with something dessert-like but without all the sugar and empty calories.

My solution to sugary sweet desserts has been a light fruit dip made with Silk Almond Coconut milk and fresh fruit. The fresh fruit with the dip is a step in the right direction and AWAY from the nightly ice-cream routine I became accustomed to during pregnancy!

Piña Colada Fruit Dip Recipe

Ingredients:
4 ounces Neufchatel cheese, softened
4 ounces crushed pineapple
1/4 cup Silk Almond Coconut Blend
4 ounces Lite Whipped Topping, thawed

In a medium bowl mix together Neufchatel cheese, crushed pineapple and Silk Almond Coconut Blend. Once mixed fold in whipped topping and enjoy with fresh fruit!

I love fruit and the dip is addicting so here is to getting my pre-pregnancy body back quick! My goal is to make healthier food choices and pair it with routine workouts to look better than I did before!! Since my husband is trying to make healthier choices too it has been easier as we support one another. It is always harder to make smart choices when you are with someone who is constantly scarfing donuts or downing soda right in front of you.
