4 Ingredient Red Velvet Cake Mix Cookies

Last Thursday my sister and I went to Orlando for a #meetandmake hosted by Sarah Hearts. We had a lot of fun – we stopped at the mall beforehand and then went over to the West Elm where the Meet and Make was being held. Sarah put together an awesome event where we all got to make our own mixed media canvas with awesome swag bags and sweets provided. But hey – let’s talk about the ‘sweets’ part a little more…I had never had anything red velvet before attending the Meet and Make. Sarah had the most delicious red velvet shortbread cookies and red velvet cupcakes there. I was in pregnant can’t-get-enough-sweets heaven! Guess what!? Red velvet is so yummy! Fast forward to this week when I was low on time and energy and needed something to give the boys’ teachers for Valentine’s Day. My mind raced right back to red velvet world and I decided to try making cookies from a red velvet cake mix the same way I make my lemon cake mix cookies. 4 Ingredient Red Velvet Cake Mix Cookies 4 Ingredient Red Velvet Cake Mix Cookies Red Velvet Cake Mix Cookies Recipe – yields 2 dozen cookies Ingredients:

  • Red Velvet Cake Mix
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 1/2 cup of powdered sugar

Directions:

  • In a large mixing bowl combine a boxed red velvet cake mix, vegetable oil and eggs. Use a fork to mix – the dough will be thick.
  • Using an ice-cream scoop (to avoid having red stained hands) scoop out dough and roll in powdered sugar.
  • Place cookies on a parchment lined cookie sheet and bake at 375 degrees for 8-10 minutes. Remove from oven and let them remain on the pan for one minute before removing to a wire rack to cool completely.

  4 Ingredient Red Velvet Cake Mix Cookies The cookies came out amazing and so moist in the middle! I made sure to hide the cookies for the Mason’s teachers to that they wouldn’t get eaten by my sneaky boys (that includes my husband)! We packed them up in parchment paper and twine this morning for his teachers to enjoy!
